Hummus – Mediterranean version Hummus – Mediterranean version This is the last recipe of traditional Croatian New Year’s menu. Hummus is a Middle Eastern and Arabic food dip or spread made from cooked, mashed chickpeas blended with tahini, olive oil, lemon juice, salt and garlic. Today, it is popular throughout the Middle East (including Turkey), North Africa (including Morocco), and in Middle Eastern cuisine around the globe. I will present you the Mediterranean version that we make in winter season – great apetizer for New Year’s Eve:-) Ingredients: (Serves 4) 150g chickpeas 100 ml of water in which the chickpeas were cooked 5 fillets of salted anchovies 2 tablespoons sesame seeds 8 tablespoons olive oil 2 cloves of garlic freshly ground pepper Preparation: Soak chickpeas in water overnight and boil in water for 1 hour. Pan fry shortly sesame seeds, add a little water so that sesame jelly evaporates. Cooked chickpeas chop in food processor along with anchovies, sesame seeds, chopped garlic and olive oil. Add pepper and slowly pour water in which chickpeas were boiled until you get the desired mixture. Cooked hummus cool off and spread on toasted bread.
